Makes - 9x13 pan - approx 24 bars
Total Time - 1 Hour
INGREDIENTS
CRUST
1-1/2 Cups Flour
1/2 Cup Powdered Sugar
1 Cup Butter, cold, cut in to small pieces
FILLING
3 Eggs
2-1/4 Cups Sugar (can be cut back if you don't want it overly sweet or substitute in some strawberries)
3/4 Cup Flour
3 Cups Rhubarb, finely diced (variation - use half Rhubarb and half diced Strawberries)
TOPPING (Optional)
1 Cup Oats
1Cup Pecans, chopped
PREPARATION
Stir together flour and sugar.
Cut the butter into the dry ingredients
Pat this mixture in a greased 9x13 pan.
Bake at 350 degrees for 10-15 minutes. It should be set but not browned
While the crust is baking - Make the Filling and Topping
For the Filling, beat together the eggs, sugar and flour
Stir in the Rhubarb (and Strawberries if using a mix of fruit).
For the optional topping, combine the Oats and Pecans in a separate bowl
Pour the filling mixture evenly over the hot crust and cover with the optional topping
Bake at 350 degrees for 40 minutes until set
